Amazing GF Chocolate Digestive Biscuits
Our take on the nation’s favourite biscuit is the ultimate accompaniment to a cup of tea. Our homemade version is gluten and refined sugar free, indulgently chocolatey and with a turmeric twist!

Equipment: 6cm round pastry/ biscuit cutter
INGREDIENTS
150g medium oatmeal, plus extra for rolling
150g gluten- free wholemeal flour
50g SugaVida Turmeric Superblend - Original or Ginger flavour
Large pinch of salt
Pinch of bicarbonate of soda
100g cold unsalted butter, cut into cubes
1 small egg, beaten
200g good quality dark chocolate, cut into pieces
METHOD

Preheat the oven to 200°C/ gas 6. Lightly flour a baking tray.

In a large bowl, mix the oatmeal with the flour, sugar, salt and bicarbonate of soda. Using your fingertips, rub the butter into this mixture until it resembles coarse sands. Pour in the beaten egg and bring together to make soft dough

Lightly dust a work surface with oatmeal and roll out the dough until it is about 1cm thick. Using a 6cm round pastry cutter, cut round shapes into the dough and gently transfer to the prepared baking tray.

Bake for 10- 15 minutes or until crisp and lightly browned. Remove from the oven to a wire rack and cool.

In a heatproof bowl set over a pan of boiling water, gently heat the chocolate until liquid. Holding the edge of a cooled biscuit, dip one side into the melted chocolate, tilt to allow any excess to drip off and place chocolate side up on a plate. Repeat with the remaining biscuits and refrigerate until the chocolate has hardened. Store in an airtight container.
