Grain-free Chocolate, Almond and Cranberry Brownies

These Grain-free chocolate, almond and cranberry brownies are a delicious treat that's easy to make and healthy. They're made with chunky almond butter, chia seeds, water, salt, bicarb of soda, vanilla extract and Palmyra Blossom Nectar. They also contain dried unsweetened cranberries and some lovely 70-85% dark chocolate!

These brownies are grain free, which means they can be enjoyed by many. The other ingredients are all natural and have lots of health benefits: chia seeds are full of omega 3 fatty acids and fibre; Palmyra Blossom Nectar is made from palm tree sap; dark chocolate is packed with antioxidants; vanilla has anti-inflammatory properties; and dried cranberries provide vitamin C.



INGREDIENTS

140g chunky almond butter

2 tbsp chia seeds

5 tbsp water

½ tsp salt

½ bicarb of soda

65g Palmyra Blossom Nectar

½ tsp vanilla

3 tablspoons dried cranberries – unsweetened

125g bar dark chocolate – 70-85% dark. 


METHOD

Preheat oven to 275F and line a small baking tin with parchment.

Add all your ingredients to a bowl and combine together with a wooden spoon or spatula.

Add mixture to your pre-prepared tin, smooth over and place in the oven for 25 minutes.

Remove and cool for 10 minutes before cutting into small chunks. These brownies will be more gooey and sticky than other brownies. Enjoy!
